Pairing Food is Like Pairing People – Chemistry Matters

and patented a simple way to enhance flavors of both your dishes and wines.
Recommended 1 tablespoon Pairing Salts to 1 pound protein or vegetables.
Recommended 1.5 tablespoons Pairing Salts per 1 pound of protein. Rub salts on one hour prior to cooking. If applied longer, the salt will react to the protein by ‘curing’ it and drawing out the moisture.
Recommended 2 tablespoons Pairing Salts, 1/2 cup neutral oil, 1/2 cup of suggested wine. Add ingredients and protein in a ziplock bag and marinate for atleast one hour. Remove protein from marinade before cooking. Discard remaining marinade.
Remove protein from heat and immediately sprinkle with Pairing Salts while hot so it adheres to protein. Season with Pairing Salt to taste.
